Keith has a professional design background having trained in architecture and interior design and, with his specialist knowledge of both the construction and design industries offers a unique combination of practical skills and understanding of foodservice design projects across all sectors.

With a professional catering design career of over 30 years (25 at Director level) Keith has become an authority on design and is consulted directly by signature architects. He brings a high level of technical skill to a project along with experience of the application of modern technology to improve energy efficiency and an awareness of environmental issues relating to catering.

Keith is an active member of the FCSI (Food service Consultants Society International). Having co-founded the consultancy he now leads an experienced team of design and technical consultants.

Mary Nightingale FHCIMA

Mary is a highly experienced catering operations and management consultant and a graduate of Oxford Brookes University. She started her career in the hotel industry leaving to work in the City at Lloyd’s of London running a multi site catering operation which culminated in managing the move, start up and Royal Opening of the facilities in the new Lloyd’s building, in 1986.

With over 20 years experience in catering consultancy at Director level she has been involved in major projects across leisure and the arts, benchmarking and tendering of staff dining contracts to retail catering developments and school dining strategies, including several Academies. Mary leads the operational consultancy services and has led the development of mystery diner services as a key tool in contract monitoring. Having a particular interest in healthy living, she has promoted the ‘Food for Life’ healthy eating approach in schools and encourages a responsible approach to sustainability and the environment by the company.

Mary is a Fellow of the industry body Institute of Hospitality, and co-founded the consultancy in 1993.
